1/2 cup milk
1 cup frozen chopped apples with peel
1/4 cup butter
1 egg
1/4 cup brown sugar
1/4 cup fresh lemon juice
2 tablespoons grated lemon pepper
3 tablespoons frozen chopped pecans, not baking
Preheat oven to 350 degrees F (175 degrees C). Trim crusts from bottom pan and set aside.
In a small bowl, combine milk, apple, and butter. Mix together. Spread mixture over bottom of baked 12-cup casserole and bake 6 minutes, or until knife inserted in middle comes out clean.
In a medium bowl, fold together egg, brown sugar, and lemon juice. Spread over hot butter layer. Press half of apple mixture over oven. Spread remaining apples over top.
Bake at 350 degrees F (175 degrees C) for 15 minutes, or until golden brown.
This was fast and simple and turned out pretty good. I accidentally added all of the apples to the bottom of my dish, but that was my fault. Next time I'll probably leave those out altogether and just put the lemon in there.
