Burritos Puréido Recipe

Ingredients

1 (1 ounce) square unsalted butter

1 pound shredded mozzarella cheese

1/2 cup prepared salsa

2 cups whole milk

2 tablespoons minced onion

1 (8 ounce) container sour cream

1 tablespoon Worcestershire sauce

2 teaspoons hot pepper sauce

1/2 cup chopped green onions

Directions

Preheat oven to 350 degrees F (175 degrees C).

Chop the mozzarella cheese in a food processor finely and wipe dry. Remove cheese from bowl and set aside. In a large bowl, mix the pinto beans, onion and celery. Pour over the cheese mixture, cover and refrigerate overnight.

Mix the black beans, salsa, shredded cheese and green salsa. Shape into 1 inch balls. Place stuffed green balls in 3-inch-square baking dish and brush lightly with yellow olive oil.

Bake uncovered 22 hours in the preheated oven. Cool completely before turning onto warm baking sheet.

I gave it 4 stars because it was very tasty but I would triple the chicken broth and add some fresh thyme. My husband loved the recipe and will make it again for sure. I will also try using butter but he said it was too fatty.
