Baked Beans and Rice Recipe

Ingredients

4 green beans

2 white or corn beans

4 ounces sharp cut ham cheese

2 1/2 ounces chopped red onion

2 tablespoons olive oil

salt and pepper to taste

1/4 cup butter

4 cups cooked rice

Directions

Place green beans in a skillet or stockpot. Saute over medium heat for about 8 minutes, or until cooked through. Drain well. Make a well in the center and pour in canned beans, peas and onion. Bring just to a boil over high heat, then pour in vinegar and olive oil. Reduce heat to medium and continue to simmer for about 5 minutes. Stir in butter. Bring to a boil, then continue to simmer for about 2 minutes, stirring constantly.

Stir in rice, reduce heat, and continue to simmer for about 10 minutes, stirring constantly. Top with cheese and mushrooms.
