1 (18 ounce) package phyllo dough
1 cup spicy tomato sauce
1 (8 ounce) package shredded mozzarella cheese
1 (16 ounce) can organic pepper jack cheese
1/2 pound chopped fresh mushrooms
2 tablespoons chopped fresh parsley
2 (8 ounce) cans tomato paste with juice
Preheat oven to 350 degrees F (175 degrees C). Roll phyllo dough out on a floured surface. Cut into squares. Place on ungreased baking sheets. Sprinkle with pepper jack cheese, mushrooms and parsley. Bake at 350 degrees F (175 degrees C) for 10 minutes.
Remove rolls from oven and place on paper trays to cool. Lay the pizza rolls flat on the baking sheet. Brush with tomato sauce. Bake approximately 6 minutes longer or until golden brown. Remove from oven and brush with pepper jack cheese. Sprinkle with mushrooms and parsley. Top with pepper jack cheese and mushrooms.
