1 cup sour cream
2 (3 ounce) packages instant coconut cream pudding mix
1 cup light rum
1 (2 ounce) can sliced pecans
1 (8 ounce) jug lemon-lime flavored carbonated beverage
1 ripe ripe pineapple, sliced
1 lemon, zested
1 cup chocolate syrup
1 large raspberry jam
1/4 cup lemon juice
1/2 cup lemon zest
In a medium bowl, mix sour cream, pudding mix, light rum, pecans, lemon-lime soda and slice of pineapple. Serve in carbonated beverages or ice cream.
In a small mixing bowl, cream together chocolate syrup and lemon-lime soda until smooth. Stir lime zest, lemon zest and jam onto pineapple.
