1 1/2 cups Riesling wine
1/2 cup water
2 tablespoons orange juice
1 tablespoon finely chopped fresh ginger
2 tablespoons lemon juice
2 eggs
1 teaspoon vanilla extract
1/3 cup brown sugar
1/4 cup peanut butter
Preheat oven to 375 degrees F (190 degrees C). Line oven racks with aluminum foil.
In a large saucepan over medium heat, bring the wine and water to a boil. Remove from heat and pour into the saucepan with the juice and ginger. Bring to a boil, and boil gently, stirring constantly. Cook until thickened.
In a large mixing bowl, combine orange juice, lemon juice, eggs, lemon juice, grapefruit zest, brown sugar, icing sugar and peanut butter until smooth. Beat of 2 tablespoons, scraping bowl often, to make a smooth and creamy sauce. Pour over pie and serve immediately.
