1 pound pork loin
2 tablespoons bacon grease
1 tablespoon Worcestershire sauce
1 tablespoon salt
1 tablespoon Italian seasoning
1 onion, finely chopped
2 slices Swiss cheese
Place bacon grease in a small bowl. Heat oil in a large skillet over medium heat. Add the bacon grease, browning in 1/4 cup of the grease. Remove pork and brown 4 to 5 inches from the skillet; drain.
Bring a large pot of water to a boil. Add the pork, turn to coat, and cook for about 10 minutes on each side or until no longer pink.
Meanwhile, in a small bowl, mix together Worcestershire sauce, salt, Italian seasoning, bacon and onion. Add this to the skillet and cook slowly for about 6 minutes.
Place Swiss cheese in a large bowl. Roll the pork into a tight roll. Place roll in the skillet. Cook over medium high heat until evenly browned; drain.
