1 cup lemon juice
1 cup remaining lemon juice
1/2 cup lemon zest
1/2 cup ground cinnamon
1 teaspoon vanilla extract
1 tablespoon the juice from one banana
1 cup chopped dates
Lightly oil 8 ounces of cookie sheets. To make filling and filling mixture mix the lemon juice with lemon zest and lemon juice with cinnamon. Stir lemon zest into banana, date and orange segments. Roll cookies to about 1/2 inch thickness.
Place strawberries in large bowl. Meanwhile, mix lemon juice, lemon zest and lemon cinnamon. Mix bananas, dates, and sugar until well blended. Roll dough into 1 inch balls, pinch edges to seal and place about 1/4 inch apart on cookie sheets.
Bake for 10 minutes in preheated oven, turning halfway through. Cool completely on wire rack. Cool completely, cut into squares.
