2 eggs
2 cups butter
1 cup powdered sugar
3 cups milk
1 teaspoon vanilla extract
2 cups all-purpose flour
1 1/2 cups flaked coconut
Place eggs in large glass bowl. Melt butter and sugar in microwave; stir in milk and vanilla. Gradually pour mixture into eggs. Fold 1/2 cup shortening into coconut mixture. Dip pie crust into foam and place on serving dishes. Boil or spray with heavy-duty vegetable oil until thickened. Serve warm or cold.
