Coconut Cream Pie II Recipe

Ingredients

1 (8 ounce) package cream cheese, softened

1 cup chopped onion

2 eggs

2 eggs, beaten

1 cup shredded coconut

1 1/2 tablespoons lemon juice

1 teaspoon vanilla extract

1/2 cup white sugar

1/2 teaspoon lemon zest

1 cup chopped walnuts

1 cup evaporated milk

1 1/2 cups butter, softened

2 eggs

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 (9 inch) prepared graham cracker crust

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch pie pans.

In a large bowl, cream together the cream cheese, onion, eggs and coconut until smooth. Mix in the lemon juice, lemon zest and chopped coconut. Mix in the lemon juice and vanilla extract. Pour mixture into pie crust.

Bake in preheated oven for 25 minutes, or until toothpick inserted in center comes out clean. Serve warm.
