Coconut Cream Pie I Recipe

Ingredients

2 large ripe bananas

1 1/2 cups butter flavoured creamer

1 1/2 cups packed light brown sugar

1 1/2 cups evaporated milk

2 eggs

1 cup chopped fresh parsley

2 teaspoons vanilla extract

2 cups crushed coconut

2 cups rolled buttery round crackers

Directions

Preheat oven to 400 degrees F (200 degrees C). Grease a 9 inch deep dish pie pan. Remove peel from bananas and cut into seeds.

In a large bowl, mix the cream cheese, white sugar, evaporated milk and eggs. Blend this mixture into the creamed banana mixture. Mix in the parsley, vanilla and coconut cracker. Pour mixture into prepared pan.

Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of the pie comes out clean. Remove from oven and allow to cool.
