2 apples, peeled and cored
1 cup boiling water
2 tablespoons lemon juice
1 teaspoon grated lemon zest
2 tablespoons white sugar
1 tablespoon molasses
1 teaspoon vanilla extract
Place apples and water in small saucepan with enough water to cover. Bring to a boil, stirring frequently. Reduce heat to low; cook, stirring constantly, for 3 to 4 minutes or until apples are tender and water is reduced. Remove from heat and cool to room temperature. Remove skins and seeds.
Pour lemon juice and lemon zest into saucepan. Bring to a boil, stirring constantly. Remove from heat and stir in sugar. Heat until mixture coats the back of a metal spoon. Remove from heat and steep in molasses and vanilla until thick. Serve over fruit.
