1 (9 inch) pie crust, baked
2 packets instant sugar-free vanilla pudding mix
1 cup whipping cream
1/4 cup butter, softened
1/2 cup brown sugar
1 tablespoon lemon juice
1 1/2 cups white sugar
1 teaspoon vanilla extract
1 cup chopped pecans
Preheat oven to 375 degrees F (190 degrees C).
In a large mixing bowl, beat whipping cream until fluffy. Beat in butter, brown sugar and lemon juice. Beat in the whipping cream mixture and sugar. Beat in the divided pecans. Pour batter into baked pie pan.
Bake at 375 degrees F (190 degrees C) for 8 to 10 minutes. Cool completely.
