1 (1 ounce) package taco seasoning mix
4 tablespoons vegetable oil
2 large onions, halved
1 green bell pepper, halved
1 (8 ounce) can or bottle refried beans
1 (16 ounce) can sliced black olives, drained
1 pint shredded Cheddar cheese
2 pounds shredded lettuce
1 (4 ounce) can tomato paste
1 cup chopped green bell pepper
1 (1 ounce) package taco seasoning mix
1 cup shredded Monterey Jack cheese
Heat oil in a large saucepan over medium heat. Place onions and green bell pepper in oil mixture and saute until tender. Stir in green beans and olives. Gradually stir in Cheddar cheese and simmer 1 minute.
Drain bean mixture and reserve 1/2 cup for other use. Place 1/3 cup refried beans in bottom of 8x8 inch baking dish. Sprinkle with 1/4 cup Monterey Jack cheese. Spoon taco seasoning and cheese mixture over bean mixture.
Bake 15 to 20 minutes in the preheated oven, or until heated through. Top with another 1/3 cup of refried beans, spread with 1/3 cup cheese mixture and roll into lettuce wraps.
I added my fish flakes and they added a nice bit of flavor.
