10 ounces shredded cheese
2 (1 ounce) squares unsweetened sour cream
1 (8 ounce) can refried beans, drained
1 large onion, diced
1 green bell pepper, diced
1 (1 ounce) package taco seasoning mix
1 (8 ounce) can salsa
In a medium bowl, mix shredded cheese, sour cream and refried beans. In a small bowl, mix in onion, bell pepper and taco seasoning mix. Transfer to a large bowl and mix in salsa. Refrigerate overnight.
Reduce the liquid in the microwave oven by adding about 1/2 cup of the refried beans and boiling water until completely dissolved. Stir the eggs, green bell pepper and taco seasoning into the skillet and mash well. Pour the mixture into the skillet, stirring well to combine.
