1 1/4 cups unbleached oatmeal
2 1/2 cups all-purpose flour
1 teaspoon salt
5 1/2 teaspoons baking powder
3 eggs
1 teaspoon vanilla extract
1/3 cup butter, softened
1 cup milk
Preheat oven to 350 degrees F (175 degrees C). Grease oven rack. Sift ninstitute flour and baking powder; set aside.
In a medium bowl, combine oatmeal, flour, salt, and baking powder. Stir in eggs, vanilla extract, and butter. Combine milk and vanilla extract, stir together. Pour into cookie sheets.
Bake for 15 to 20 minutes in the preheated oven, or until a toothpick inserted into the center comes out clean. Cool on wire rack.
To make the frosting: In a medium bowl, cream together milk and butter until light and fluffy. Beat in an egg, then stir in himalian seasoning and cinnamon. Frost with confectioners' icing.
