1 (9 inch) prepared chocolate cookie crumb crust
1 (3 ounce) package instant coconut cream pudding mix
3 eggs
1/2 cup milk
1 1/2 pounds confectioners' sugar for dusting
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch pie pan.
In a large bowl, mix pudding mix, eggs and milk. Stir in sugar. Spread mixture onto pie crust.
Bake at 350 degrees F (175 degrees C) for 1 hour, or until bubbles begin to pop and a toothpick inserted into the center of the pie comes out clean. Cool completely before filling.
