1/4 cup coconut milk
1 1/2 teaspoons lemon juice
3 lime zest, juice reserved
1 cup lukewarm milk
1 (3 ounce) package instant vanilla pudding mix
1 (2 ounce) can crushed pineapple, juice reserved
1 (2.25 ounce) package instant vanilla pudding mix
3 cups heavy whipping cream
In a blender, combine coconut milk, lemon juice, lime zest and lemon juice concentrate. Pulse to blend. Slowly pour in 3 slices orange, pineapple and vanilla pudding. Blend until evenly distributed.
Beat cream with 1/2 cup lemon juice mixture until soft peaks form. Fold cream into pudding mixture until reduced. Stir coconut cream mixture into whipped cream. Pour mixture into large glass serving bowl. Chill overnight before serving.
