3 pita breads, cut in half
2 cucumbers

4 soft round pita pockets, warmed
4 cups sliced peppers
2 tomatoes, diced
1 small onion, chopped
1 cup chopped fresh mushrooms
1/4 cup shredded lettuce
Preheat the oven to 350 degrees F (175 degrees C).
Place the pita bread halves first in preheated oven, then place on top of the cucumber slices. Spread the pita pockets with the peppers, tomatoes, mushrooms and lettuce.
Meanwhile, place each of the four pita pockets into a greased 8x8 inch baking dish. Top with lettuce and place in oven. Place prepared dish in broiler pan, remove pan and bake 20 minutes.
Meanwhile, take a large plate, and cut slits in side of top of pita to allow steam to escape.
Meanwhile, preheat oven to 225 degrees F (125 degrees C).
Bake uncovered 20 minutes longer than you would like, turning pita every 5 minutes. Serve at 225 degrees F (125 degrees C), or cook 10 minutes longer.
very good, a bit bland, i added 2 Tbls. cream cheese a small amount of garlic powder and cracked black pepper to the second batch curried at 125 and they came out better
