1 cup butter
1/2 cup brown sugar
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup chopped pecans
In a saucepan, melt butter. Stir in brown sugar, lemon juice and vanilla extract. Reduce heat to medium, and simmer for 10 minutes. Gradually beat in flour, baking powder and baking soda. Stir pineapple into the thickened mixture. Pour over pineapple mixture; allow to cool completely.
