2 tablespoons olive oil
1 cup diced onion
1 medium tomato
1 medium green bell pepper
1 large green bell pepper, seeded and halved
5 ounces fresh spinach, thinly sliced
In a medium bowl, mix the olive oil, onion, tomato, green bell pepper, green bean and spinach. Cover and refrigerate approximately one hour before serving.
Almost as good as the place I grew up eating it. Hopefully this serves as a baseline for how to make !!!!
