1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 teaspoons baking powder
1 cup shortening for frying
1 cup white sugar
1 1/4 cups milk
2 eggs, beaten
1 teaspoon vanilla extract
Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, stir together flour, baking powder, baking soda and baking powder. Make a well in the center, and pour in shortening, sugar and milk. Mix until smooth. Press the flour mixture into the bottom of a 9 inch round cookie sheet.
Fry cookies 1 inch from center of the pan. Transfer cookies to the pan, brush edges with egg and vanilla. Place them on the cookie sheet.
Bake for 15 to 20 minutes in the preheated oven, until golden brown and lightly browned. Cool on baking sheets before removing from pan.
