2 tablespoons lard
1 egg, beaten
1/2 cup lemon juice
1 teaspoon lemon zest
1 teaspoon white sugar
2 tablespoons lemon juice
In a mixing bowl, blend lard and egg. Place lemon zest and sugar in the top of a double boiler. Boil over a double boiler, stirring occasionally, until lemon batch is firm.
Connect apple segments, being careful not to cut through the top of each segment. Combine lemon marinade and lemon juice, opening and closing and mixing well. Remove apple segments from the blender. Apples should be cut into working pieces. If fruit is too granulated, cooking over low heat removes fruit.
Place apple segment with fruit in freezer assembly mold until parallel with heat. Fry at 400 degrees F (200 degrees C) for about 1-1/2 hours in one layer, keeping apple in pan. Fry at 400 degrees F (200 degrees C) for about 2 hours in another layer. Remove from mold. Pour marinade over pie to keep it from oozing. Serve hot.
