1/4 cup all-purpose flour
1/2 teaspoon salt
4 medium carrots, peeled and sliced
2 teaspoons white sugar
1/4 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 tablespoon vegetable oil
2 tablespoons butter, melted
1 cup raisins
In a medium bowl, mix the flour, salt, carrots and sugar; gently toss until completely coated.
Pour melted butter into a medium bowl and blend into the mixture, then stir in raisins.
Place carrot halves in the prepared pan. Brush with melted butter and spread evenly in the center. Garnish with a pinch of salt.
Cover with aluminum foil and refrigerate overnight, turning once. About 1 hour before serving, stir avocado oil into the pan.
