1 1/2 cups pureed pineapple
1/4 cup white sugar
1/3 cup all-purpose flour
1/2 teaspoon baking soda
1 teaspoon vanilla extract
1/4 teaspoon salt
1 egg
1 cup vegetable oil
2 teaspoons orange juice concentrate
1/4 cup raspberry preserves
Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, mix together pineapple puree, sugar, flour, baking soda, vanilla extract and salt. Mix this mixture into the pineapple puree mixture until well blended. Fold in the egg, oil and orange juice concentrate. Mix all ingredients into the prepared cookie sheet. Drop cookies by heaping teaspoons onto the prepared cookie sheet.
Bake for 8 to 10 minutes in the preheated oven, or until a toothpick inserted in the center comes out clean. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
