3 (9 inch) unbaked pie crusts
2 teaspoons vanilla extract
1 (8 ounce) package cinnamon flavored Jell-O mix
1 cup boiling water
4 cups chilled cream cheese, warmed
2 cups frozen whipped topping, thawed
Preheat oven to 450 degrees F (220 degrees C).
Just press one end of pie crust onto pie plate and seal edges of sides of pie. Set aside.
In a large bowl, combine the gelatin, hot water, whipped topping and remaining gelatin mixture.
Place dessert covered pie pan onto a cookie sheet and decorate with whipped topping. Cover pie completely with plastic wrap. Brush exterior with lemon juice and bake in preheated oven for 1 hour. Remove plastic wrap and bake 45 minutes longer, or until golden brown. Cool completely before serving
