1/2 cup olive oil
1 large onion, cut into small wedges
1 medium head cabbage, shredded
6 skinless, boneless chicken breast halves
1 (15 ounce) can mixed vegetables
1/2 cup sour cream
1 (16 ounce) package shredded Cheddar cheese
Heat olive oil in a large saucepan over medium heat. Add onion and fry in olive oil until tender, about 10 minutes. Stir in cabbage. Bring to a steady boil, stirring constantly. Reduce heat, and simmer 15 minutes more, until cabbage is softened.
Mix mixed vegetables, mixed vegetables, sour cream and cheese. Pour over chicken and toss to coat. Toss to coat.
