3 stalks celery, finely chopped
3 red onions, finely chopped
1 cup chopped fresh thyme
1 small white onion, thinly sliced
1 teaspoon salt
7 cups water
2 tablespoons butter
In a blender, combine celery, onions, thyme, salt and remaining 1 tablespoon butter.
Fill a medium saucepan with water. Bring to a boil, and boil for 3 minutes. Remove from heat, and mix with celery mixture. Stir. Reduce heat to low, and continue to cook for 2 minutes. Serve hot but do not prevent from cooking.
