Peach Loaf Recipe

Ingredients

2 tablespoons butter

1 1/2 tablespoons lemon juice

1 teaspoon vanilla extract

2 cups all-purpose flour

3 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup chopped peaches

1/8 teaspoon ground cinnamon

1 cup chopped pecans

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8x12 pan.

Slice and finely chop peaches. Place peaches and pecans across the bottom of the 8x12 pan. Gently spread peach mixture over peaches. Roll out pecans to 1/2 inch thickness. Place over peach mixture.

Bake at 350 degrees F (175 degrees C) for 1 1 hour in the preheated oven. Reduce heat to 350 degrees F (175 degrees C) for 10 minutes. Return peach mixture to oven for 10 to 15 minutes, or until juices run clear. Spread peach mixture with 1 1/2 cup pecans. Place peach loaf over peach mixture. Cover loosely with aluminum foil. Refrigerate peach mixture overnight before slicing.
