4 3/4 cups distilled white vinegar
1 teaspoon lemon juice
1 teaspoon orange juice
1 teaspoon maple extract
In a saucepan over medium heat, combine distilled white vinegar, lemon juice, orange juice, maple extract and 1 teaspoon lemon zest. Bring mixture to a boil and stir over medium heat to make a syrup. Pour over strawberries and skirt in egg whites.
Cool to room temperature. Cover marinated fruit. Wrap tightly in plastic wrap and refrigerate another day. Serve in small saucepan with marinated fruit in bowl. Keep marinated fruit in refrigerator; devein when serving.
