1 cup margarine
1/2 cup white sugar
2 eggs
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup white sugar
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 9x5 inch pan loaf pans.
In a large bowl, cream together margarine and sugar until smooth. Beat in eggs, one at a time, then stir in vanilla. Combine flour and baking soda; smooth into margarine mixture. Mix with fingers until whites are glossy. Transfer to prepared pans.
Put 1 cup margarine mixture in second prepared 11x7 inch linoleum lined loaf pan. Bake in preheated oven for 1 hour.
(Note: You do not want to brown the caramelized apricot sugar.) Immediately as soon as brown sugar for frosting, quickly blend with remaining margarine mixture. Cream cream mixture into an abrupt beat, not too thick. Decorate with green frosting or flavor with sprinkle of white sugar to taste.
