1/2 cup butter or margarine
1/2 cup shortening
2 eggs
1 1/4 cups white sugar
1 teaspoon vanilla extract
1 1/3 cups minced pecans
1 cup all-purpose flour
1 teaspoon baking powder
1 cup packed brown sugar
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon ground ginger
1 teaspoon vanilla extract
Preheat the oven to 375 degrees F (190 degrees C).
Beat butter and shortening in the bowl of an electric mixer or in a large bowl cream together. Beat in egg, 1 tablespoon at a time, then mix in sugar and vanilla. Beat in pecans. Combine flour and baking powder; stir into the butter mixture.
Pour batter into prepared cookie sheet.
Bake in the preheated oven for 12 to 13 minutes, or until a toothpick inserted in the center of the cookie comes out clean. Allow cookies to cool on the cookie sheet for 5 minutes before removing to a wire rack to cool completely.
