Oatmeal Raisin Cookies IV Recipe

Ingredients

1/2 cup butter, softened

1 1/2 cups packed light brown sugar

1/2 cup milk

2 eggs

3 teaspoons vanilla extract

1 cup sifted all-purpose flour

1 teaspoon baking powder

Directions

Preheat the oven to 425 degrees F (220 degrees C).

In a medium saucepan over medium heat, combine butter and brown sugar. Cook in a 1/2 inch water until bubbles form in the butter mixture. Remove from heat, allow to cool to lukewarm. Stir in milk, eggs and vanilla. Mix together fine. Pour into cookie sheet.

Bake for 6 to 8 minutes in the preheated oven. Remove from cookie sheet to wire rack. Carefully press cookie into center of each cookie. Cool completely on wire rack. Dust with powdered sugar.

I was really pleased with this recipe. I loathe casseroles and this was very easy to make. I doubled the recipe and it was plenty large enough. I measured out the flour by hand as I mixed the ingredients. I believe I used 1 1/2 cups of flour rather than the full amount due to rounding errors. I would go as far to say that this was too small of a coating to use but I did use olive oil instead of water because I didn't have either. I used dry mustard and added salt. I could see adding parsley since I like fresh veggies and it added flavor.
