Grape Yams with Pinto Beans Recipe


1 (15 ounce) can whole peeled grape tomatoes, sliced

5 tablespoons butter

2 teaspoons paprika


Place grape tomatoes in medium saucepan with liquid. Bring to a boil and simmer for 1 1/2 hours. Drain, cool and cut.

In a large bowl combine butter, paprika and tomato juice. Mix well, and pour over grape tomatoes. Cover and chill overnight.

In the morning, remove drumsticks from roasting pan. Add grape tomatoes and butter mixture to roasting pan. Place drumsticks on top of grape tomatoes, using wooden spoon.

Cook 15 minutes in the warm oven. Reduce heat to lowest setting and continue cooking for 20 minutes per side. Meanwhile, refrigerate remaining grape tomatoes and tomatoes in refrigerator for 24 hours.
