1 1/4 cups water
1/2 cup white sugar
2 potatoes, peeled and cubed
3 tablespoons vegetable oil
2 oranges, juiced and zested
2 cups red fruit preserves
2 tablespoons apple juice
salt and pepper to taste
In a saucepan, bring water to a boil. Chill in refrigerator.
In a medium saucepan, bring potato juice to a boil. Stirring constantly, cook over medium heat until potatoes are cooked through but not mushy.
Remove from heat and pour over fruit. Stirring constantly, pour in orange preserves. Fill with lemon juice and apple juice. Cook until juice is absorbed, stirring gently with a metal spoon or whisk. Do not allow to stand for more than about 3 minutes. Pour into fruit.
Cover and cool slightly. Cut into cubes. Lovely!
