1 cup cooked quinoa
1 cup cooked corn
1 medium onion, diced
1 large potato, diced
1 1/2 cups water
2 eggs
1 teaspoon salt
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon dried rosemary
1/8 teaspoon salt
1/2 teaspoon dried thyme
1/8 teaspoon dry oregano
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, mix quinoa, corn, onion, potato, and water. Mix thoroughly. Place the diced onion and potato into a casserole dish and sprinkle with egg, salt, oregano, basil and rosemary.
Bake in preheated oven for 40 minutes. Turn over and bake for 30 more minutes.
