1 (12 ounce) package cream cheese, softened
1 (10 ounce) can pumpkin puree
1 cup white sugar
2 teaspoons vanilla extract
In a medium bowl, beat the cream cheese until fluffy. Mix in the pumpkin puree and sugar until well-combined. Shape the mixture into two or three small balls (depending on how you like your peanut butter cups). Chill in the refrigerator 8 hours or overnight before serving.
