1 cup mayonnaise
1 cup vinegar
1 tablespoon lemon juice
6 leeks, chopped
1 tablespoon white sugar
1 (14 ounce) can whole milk
1 tablespoon lemon juice
1 (16 ounce) container frozen mixed vegetables, thawed
1 (3 ounce) can sliced peaches
1 (3 ounce) package cream cheese, at room temperature
1/4 cup milk
1 (3 ounce) package instant vanilla pudding mix
1 (8 ounce) package cream cheese, at room temperature
In a medium bowl, mix mayonnaise, vinegar, lemon juice and leeks. Stir this mixture into the machine blender or food processor to puree a mix. Transfer to an empty medium bowl. Place the sliced leeks into the blender to puree. To the puree, mix whole milk, lemon juice, peaches and cream cheese. Pour this mixture into the mincemeat mixture in a completely smooth motion.
Pour the juice into a medium bowl, and stir in the whipped cream. Refrigerate overnight before serving.
