Pumpkin Squares Recipe

Ingredients

1 cup butter, softened

1 cup white sugar

1 egg

2 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon vanilla extract

3/4 cup chopped pecans

6 tablespoons butter

1 teaspoon pumpkin pie spice

1/2 teaspoon vanilla extract

3/4 cup chopped walnuts

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch cake pans.

In a large bowl, cream together the butter, sugar, egg, flour, baking powder, baking soda and salt. Mix in the vanilla extract, pecans and pumpkin pie spice. Mix until just blended.

Divide the batter into 10 1-inch squares. Dust a tablespoon of the batter on the bottom and sides of the prepared pans. Place the squares in the pans. Cover the baking pans with the remaining batter. Seal edges and cut about 2/3 through the center of the pans.

Bake in preheated oven for 45 minutes, or until a toothpick inserted into the pans comes out clean. Cool completely before removing from pans. Cool completely before cutting into squares.
