Overnight Rice and Beans Recipe

Ingredients

1 cup uncooked long-grain rice

3 cups water

1 cup uncooked nondairy yogurt

1 cup disc packed light brown rice

Directions

Preheat oven to 450 degrees F (230 degrees C). In a medium saucepan, combine the rice and water and simmer for about 2 hours, until the rice is tender, but still firm. Warm the milk in a small saucepan until it bubbles and then add yogurt. Puree the rice mixture into this mixture.

In a skillet over medium heat, melt brown rice, stirring occasionally so that it is evenly browned with the water. Cook the rice until tender, about 10 minutes. Stir in the cooked rice with the cooked sausage, oil, milk and yogurt until a long, thick gravy thickens. Transfer to a 9x13 inch dish and garnish with Bacon Bits and cheese. Sprinkle remaining bacon bits on top, and bake at 450 degrees F (230 degrees C) for 20 more minutes, or until the cheese is melted.

I kind of regret putting this off so long. I felt it needed a bit more shaking under the hot oil. I didn't have vinegar on hand so I resorted to using orange/mango juice. It wasn't too bad, but not hello comforting either. I'll put this one into my recipe box and make another.
