2 large white onions, thinly sliced
1 cup bacon bits
2 cloves garlic, minced
2 tablespoons olive oil
4 tablespoons poppy seeds
1 tablespoon olive oil
4 slices Swiss cheese
Place onions, bacon bits and garlic into a small saucepan. Cook over medium heat until onions are tender; drain. Stir in the oil. Bring to a boil over medium heat; boil stirring constantly. Remove from hot head, stirring occasionally, until bacon is crisp. Remove from heat.
Remove bacon from fat, leaving about 2/3 of a small slice side down. Dip onion slices between two thin strips of bacon; brush evenly with oil. Roll slices into small muffins, place one on each serving plate, and roll in poppy seeds or olive oil, pouring a little into the center of each muffin for a swirl effect.
Bake in preheated oven for about 20 minutes.
Remove muffins from oven. Serve hot.
