1 teaspoon vegetable oil
1 egg, beaten
1 egg yolk
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 1/3 cups milk
1 teaspoon cornstarch
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon baking powder
1 (15 ounce) can crushed candy corn
Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups.
Mix olive oil, sugar, eggs, yolk, sugar, eggs, vanilla extract, milk and cornstarch. Stir until blended. Fold into batter until completely smooth. Bake in preheated oven for 20 minutes. Pour batter into prepared muffin cups and bake 20 minutes more.
