1/2 cup butter, softened
1 cup packed brown sugar
1 egg
1 tablespoon vanilla extract
1 1/2 cups rolled oats
4 small yellow bananas
3 cups confectioners' sugar for dusting
Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter and brown sugar until smooth. Beat in the egg and vanilla until well blended. Combine the oats, bananas, 2 cups brown sugar and confectioners' sugar; stir into the creamed mixture until just mixed. Drop by well jelly onto the prepared cookie sheet.
Bake for 12 to 17 minutes in the preheated oven, or until slightly browned. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
