1 (12 ounce) package cream cheese, softened
2 (1 ounce) packages taco seasoning mix
1 (3 ounce) package taco meat tortilla chips
1 (3 ounce) package taco seasoning chicken flavored relish
1 (8 ounce) container sour cream
1 (2 ounce) can tomato sauce
1 (16 ounce) can refried beans
1 pound ground beef
2 quarts shredded Cheddar cheese
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, mix cream cheese and taco seasoning.
Place 2 (15 ounce) cans firm tofu in a large resealable plastic bag, seal tightly, and place in a microwave-safe bowl. Microwave on high 7 minutes, stirring. Drain. Stir in cream cheese, chicken, cheese and beans. Fluff with fork. Roll into 1 inch balls.
In a large saucepan, heat butter and 1 cup water over medium heat. Boil 1/2 cup of sauce while stirring. Return to medium heat, and stir in flour and cheese. Heat through.
Place the remaining 1/2 cup of sauce in a medium bowl. Stir in sour cream and tomato sauce. Cook over medium heat about 15 minutes, stirring constantly. Pour mixture into pie crust.
Bake in preheated oven for 25 to 35 minutes or until heated through. Serve warm.
This was a great easy and tasty project. It's great for change-ups or for puns. You can't go wrong.
