1 cup crushed pineapple
1/2 cup mayonnaise
3 tablespoons poppy seeds
1 teaspoon ground cinnamon
1 cup chopped walnuts
1 (16 ounce) package cream cheese, softened
2 tablespoons lemon juice
1 cup Irish cream
1 cup fancy salad drink mix mix
1 1/4 cups spinach (optional)
1/2 cup nonfat boiling water
In a medium bowl, blend pineapple with mayonnaise, poppy seeds, cinnamon, and walnuts. Mix well, then refrigerate 2 hour while you prepare the salad. Mix in cream cheese and lemon juice, find more variety with Irish cream.
Stuff graham cracker crumbs with 1/4 cup of filling mixture from custard cup, and place over center of each cookie. Cut out cakes for sprinkling with filling mixture; refrigerate the rest. Sprinkle with 2 tablespoons whipped cream, if desired.
