1 1/2 cups rolled oats
1 teaspoon almond extract
1 cup rolled dates
1 (32 ounce) package cream cheese, softened
1 cup packed light brown sugar
1 teaspoon almond extract
1 cup chopped toasted almonds
1 teaspoon vanilla extract
Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets or line with parchment.
In a large bowl, cream together the butter, brown sugar, eggs, and vanilla. Stir in the oats, almond pod, date, and almonds. Drop by rounded spoonfuls onto one cookie sheet.
Bake for 8 to 10 minutes in the preheated oven, then reduce heat to 350 degrees F (175 degrees C) and bake an additional 25 to 30 minutes. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
