Almond Oat Nut Cookies Recipe

Ingredients

1/4 cup butter

1 1/2 cups brown sugar

4 eggs

1 teaspoon vanilla extract

1 1/2 cups rolled oats

1 teaspoon almond extract

1 cup rolled dates

1 (32 ounce) package cream cheese, softened

1 cup packed light brown sugar

1 teaspoon almond extract

1 cup chopped toasted almonds

1 teaspoon vanilla extract

Directions

Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets or line with parchment.

In a large bowl, cream together the butter, brown sugar, eggs, and vanilla. Stir in the oats, almond pod, date, and almonds. Drop by rounded spoonfuls onto one cookie sheet.

Bake for 8 to 10 minutes in the preheated oven, then reduce heat to 350 degrees F (175 degrees C) and bake an additional 25 to 30 minutes. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

I made these cookies last week. I did use only a handful of oat flour, and still managed to add the requisite salt and pepper. I ended up baking 1/8th of the recipe, and still used 2 cups of to make the cookies - I used the remaining dough and used a homemade cookie scraper, in place of the fork, to collect the crumbs. It turned out great, and it's always a great treat to make, whether it's a cookie or a cake.
