8 ounces cream cheese, softened
1 cup white sugar
1 tablespoon lemon juice
1 egg, slightly beaten
1 cup bread crumbs
1 teaspoon vanilla extract
1/4 teaspoon lemon zest
1/2 teaspoon lemon extract
2 cups shredded Cheddar cheese
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (9 inch) round baking pans.
To Make Cookie Crust: Mix cream cheese, sugar, lemon juice, egg, bread crumbs, vanilla and lemon zest together.
To Make Filling: Place the cream cheese mixture, Cheddar cheese and 1 cup Cheddar cheese in the prepared pan. Heel off edges of crust to marinate.
Bake in preheated oven for 45 minutes. Remove crust from oven and allow to cool completely.
Meanwhile, in a blender, combine sliced celery, 1/2 cup Cheddar cheese, shredded cheese and lemon zest. Blend until smooth. Pour cream cheese mixture over celery mixture. Chill pie before serving.
