1/2 cup margarine
1 cup brown sugar
1 cup packed light brown sugar
2 teaspoons yeast
3 tablespoons vegetable oil
2 cups all-purpose flour
1 cup white sugar
4 teaspoons baking powder
2 teaspoons salt
Mill margarine in a large bowl, baking soda dissolved in, and sugar and brown sugar together in a small bowl. Beat yeast mixture with oil in a small bowl; stir flour into 1 cup sugar mixture just until dough begins to pull together. Beat together brown sugar, yeast, oil, 1 cup margarine and 1 cup brown sugar with hands or in a large bowl. Cover dough with a clean tea towel or plastic wrap and let rest for 10 minutes.
Preheat the oven to 350 degrees F (175 degrees C). Brush a 2 quart cookie sheet with cooking spray. Place cookies about 3 inches apart onto the cookie sheet.
Bake for 10 to 12 minutes in the preheated oven, or until completely cooked but not brown. Allow cookies to cool on baking sheet completely before removing from the pans.
