2/3 cup white sugar
2 tablespoons all-purpose flour
3 1/2 cups milk
2 tablespoons butter
1 (8 ounce) package cream cheese, cubed
1/3 red bell pepper, sliced
1 unsweetened, chopped banana
4 tablespoons confectioners' sugar for garnish
Wash a crust pan and reserve 2 cups of flour and powdered milk. And set aside, mixing until frothy.
In a medium bowl, cream together 2/3 of the milk and softened butter. Stir in the flour and banana. Work into warm butter until mixture is smooth and creamy.
Spread cream cheese over crust. Layer 1 cup of reserved milk mixture over cream cheese layer. Then, top with a 3/4 cup of flaked coconut, a cup of lemon juice, and 1 1/2 teaspoons of whipped cream. Continue alternating layers of milk/garnish over cream cheese layer until cake comes out of the pan with a toothpick inserted into the center.
