1 1/2 cups water
1/2 cup brown sugar
1/2 cup cider vinegar
1 cup white sugar
1 teaspoon salt
1 teaspoon ground black pepper
1/2 teaspoon dried sage
1/4 teaspoon dried thyme
Preheat oven to 375 degrees F (190 degrees C).
In a large saucepan, combine water, brown sugar, vinegar, white sugar, salt, pepper, sage, thyme and 1 teaspoon sage. Heat over medium heat, stirring constantly, until sugar is dissolved.
Reduce heat to low, and add 2 cups water, 1/2 cup brown sugar, vinegar, and 1 cup white sugar. Stir gently and bring to a boil. Boil for 5 minutes. Remove from heat and stir in salt, pepper, sage, thyme and 1 teaspoon sage. Pour into a second container and chill overnight.
Preheat oven to 350 degrees F (175 degrees C).
In a large mixing bowl, whisk together the 1/2 cup brown sugar, vinegar, white sugar, salt, pepper, sage, thyme and 1 teaspoon sage. Pour mixture into 3 separate individual bowls. Place on a baking sheet.
Bake uncovered at 350 degrees F (175 degrees C) for about 1 hour. Remove from oven and let cool to room temperature.
